Welcome to the chewiest, tastiest and stickiest coconut and nut granola bars you will have ever tried. These bars are Primal-friendly, full of healthy and encouraging fats and contain no CARBS. These bars contain absolutely no processed ingredients and they simply stick together from the bounding of the desiccated coconut and raw honey.

Ingredients

Granola bars

  • Mix of pecans and almonds (240g)
  • Desiccated coconut (130g)
  • Coconut oil (55g, melted)
  • Almond butter (65g)
  • Raw honey (2 tbsp)
  • Egg (1, beaten)
  • Cinnamon (1 tsp)
  • Coconut flour (1 tsp)

Method

Begin by preheating your oven to gas mark 4 (180 degrees Celsius).
In a bowl mix together the nuts, desiccated coconut and coconut flour. Set aside.
In another bowl, add the coconut oil, almond butter and honey together. Stir thoroughly
together until the mixture is smooth (this may take some time).
Add the beaten egg to the wet ingredients and mix everything together. Next, add the
wet ingredients to the dry ingredients and stir until everything is mixed.
Line a square baking tin with parchment paper and pour your granola mixture into the
pan and flatten.
Pop your granola bars into the middle of the oven to bake for 30 minutes (or until the
edges of your granola bars are golden) and then remove from the oven and flatten the
bars down once again with a spatula.
Once done, leave to cool (this is extremely important for the bars to set). Using a sharp
knife, cut the granola into 16 bars. You may need to keep flattening the bars as you go
to keep their shape. Eat and enjoy!
