A simple, quick and flavour packed recipe. Everyone assumes when eating a lower carb or keto diet, that suddenly flavour, taste and texture are lost, that food suddenly loses its excitement. But it doesn't have to. Especially if you are following the recipes on this app! Who would have believed that noodles would be on the keto list! Well, they are. We are using fibre hydrate angel hair noodles. They are made from the konjac root, which contains glucomannan, a form of viscous fibre, keeping you full and giving that delicious pasta like bite, we all adore.

  • Konjac angel hair noodles (200g)
  • sun-dried tomato in olive oil (200g)
  • basil (handful)
  • cashew nuts (50g)
  • olive oil (2 tbsp)
  • parmesan (20g)
  • kale (handful)
  • sea salt (optional to taste)
  • red pepper (1, roasted)

Method

Preheat your oven to 180C. Remove the seeds from your red pepper and chop in to chunks. Pop in to roast for approximately 15 minutes until soft and charred at the edges.
In to a food processor place cashew nuts, red pepper, basil, sun-dried tomato, kale and parmesan. Blend together to a paste. Add the olive oil if necessary so you have a pesto consistency. Have a taste. If you would like to add a little sea salt then please do so at this stage.
In to a pan, place the angel hair noodles and add in 3 tbsp pesto. Stir through. Add a little more if you would like.
Serve with an extra grating of parmesan and enjoy! Whoever you are serving this to won't believe it isn't a wheat based pasta.
