Dinner | Lunch

This dish not only tastes great, but also looks the part too! A really great dish for dinner parties. Best of all it tastes extremely sweet, but isn't that high in carbs.

Ingredients

  • Chicken (600g)
  • Plum tomato (Sliced into wedges)
  • Cherry tomato (150g)
  • Pineapple
  • Yellow bell pepper
  • Red bell pepper
  • Red onion
  • Apple
  • tomato (1 can)
  • Garlic (4 cloves)
  • Sweet Chilli sauce (Optional)
  • MSG (1 tsp (optional))
  • salt & pepper (To taste)

Method

Cut the pineapple down the middle and scoop out the middle and pour juice and the flesh into a big cooking pot. Don't throw away the pineapple though, because these become your serving bowls!

Cut the chicken into chunks and boil till (normally takes about 15 minutes or until not pink).

Then put everything together in one big cooking pot and throw in the chicken. Add a lid and cook for around 20 minutes. I tend to also add a handful of anything green in colour (chives, or bell pepper), this just adds contrast to the colour.

If when you taste it its not sweet enough, either add stevia or sweet chilli sauce (I make mine with stevia).


I tend to serve with spinach or rocket.
