This simple prawn stir fry uses sliced cabbage in place of carb heavy noodles and is coated in a keto friendly sweet and sour sauce. This is a great option for weeknights with minimal prep and cooking time.

Ingredients

Sweet and Sour Sauce

  • tamari sauce (2 tbsp)
  • erythritol (1 tsp)
  • balsamic vinegar (1 tsp)
  • sesame oil (1 tsp)
  • tomato pur�e (1/2 tsp)
  • lime juice (1 tbsp)

Noodles

  • raw king prawns (175g)
  • tenderstem broccoli spears (4 tough ends removed)
  • fresh coriander (2 tbsp)
  • white cabbage (2 cups sliced into 1 centimetre strips)
  • coconut oil (1 tbsp)
  • garlic (1 clove minced)
  • ginger (1 inch piece grated)
  • spring onion (1 large sliced)
  • sesame seeds (1 tbsp)

METHOD

To prepare the sweet and sour sauce, add all the ingredients to a small pan over a low/medium heat and bring to a gentle boil. Stir well to combine and simmer until you have a thick syrupy consistency. Set aside.

Add the broccoli to a pan of boiling water and simmer for a minute or two until just tender. Drain and run immediately under cold water then set aside.

Melt the coconut oil in a large frying pan or work over a low/medium heat. Add the garlic and ginger and sweat gently until tender.

Add the sliced cabbage and cook for 2-3 minutes until just tender.

Add the prawns and broccoli to the pan and cook until the prawns are hot through and have turned pink.

Add the sweet and sour sauce and stir well, coating everything in the sauce.

Remove from the heat and stir through the fresh coriander.

Scatter with the spring onions and sesame seeds to serve.
