A simple ginger loaf made with real food ingredients. The perfect mid morning or tea time treat. With the beautiful warmth of ginger and cake consistency that many people following a lower carb diet miss.

- butter (4 tbsp)
- coconut flour (50g)
- low carb sweetener (30g)
- baking powder (2tsp)
- ground ginger (3 tsp)
- large eggs
- ground almond (150g)
Method
Preheat the oven to 180�C. Grease a 2 lb loaf tin.
Place all dry ingredients in to a large mixing bowl and fully combine
Make a well
Melt butter and set aside
In to a separate bowl hand whisk the eggs for 1 minute until light and fluffy with lots of air / bubbles
Pour egg mix in to the well of the dry mix and carefully fold in until fully combined
Pour in butter and combine in to the mixture so that a thick batter is formed
Add in sweetener and mix in well
In to the loaf pan add the cake mixture evenly and then bake for 30 mins at 180�c until a knife comes out clean.
Allow cake to cool and then enjoy.
Store cake in air tight container in fridge for up to 4 days
