Packed with healthy fats, this tasty green omelette made with spinach and stuffed with salmon is the perfect keto dish come breakfast, lunch or dinner!

Ingredients

Omelette

  • Spinach (60g)
  • Cheddar cheese (30g)
  • Chilli flakes (1 tsp)
  • Ghee (2 tbsp)
  • Fresh parsley (1/4 cup)
  • Full fat milk (1/3 cup)
  • Eggs (4, large)
  • Salt and pepper (To taste)
  • Salmon fillets (2, 1 per omelette)
  • Feta cheese (50g, 25g per omelette)
  • Avocado (1, 1/2 per omelette)

Method

Begin by adding the cheese, milk, 1 tbsp of ghee and parsley to a food processer and blitz altogether. Add the eggs and blitz once more. Add the chilli flakes and salt and pepper and mix everything together.

Heat a pan with a little ghee. Once warm, add half of your mixture to the pan and swirl it around. Let it cook for a few minutes on low/medium heat and swirl the pan again to move any excess liquid to the rims of the pan. Continue to do this until you no longer have any liquid sitting on top of your omelette. Once you've done that, top half of the omelette with the spinach, feta and avocado and then carefully flip the other side of the omelette over and remove from the pan.

Repeat this process again for the leftover mixture.
